Cheesy Breadsticks

This is a WINNER!!! Kids love it, hubby loves it and I love it. I mean who doesn't…its cheesy!!! :-)


Ingredients

Store bought pizza crust
1 tbsp of butter (melted)
1/2 cup of cheddar cheese
1/2 cup of mozzarella
1 tbsp of dried parsley
1/4 tsp of garlic salt

Method

1) Preheat oven to 425. 
2) Unroll pizza dough onto a greased cookie sheet and brush with butter.
3) Sprinkle cheeses and spices evenly over the dough.
4) With a pizza cutter, cut dough lengthwise into 12 long strips. Then cut those in half to make 24 strips.
5) Do not separate strips.
6) Bake for 10-12 minutes or until light golden brown.
7) Recut along each strip and remove from cooking sheet.
8) Serve sticks warm with marinara sauce.

Oatmeal Salmon Patties

I have been recently motivated ( for some reason that i can't think of now) to change my family diet to clean eating/paleo/whole 30 ( or whatever the term is these days to eat healthily). Hence, I have started to experiment recipes involving sweet potatoes, beet roots etc. As these have never been a regular in our household. After understanding more about their benefits, I thought 'why not'. But the challenge is, as a mom, how do I make it interesting enough for my kids to want to eat them. I have one picky eater ( E) and the other one (R) does fine if he is by himself ( but when the older one is around then he sometimes can change to I eat/do/say whatever my big brother eat/do/say).
Having said all that,  here is a recipe which I found was quite nice to start with. SALMON & OATS!! 
Sounds pretty healthy huh… yes they are and its yummy combo too.


Sadly, E didn't really enjoy it as much as R did. I was surprised that R even took second serving :-) Hubby came back home and gobbled down some too. Yay! Thats 3 to 1, so cant say its a winner but will certainly keep this one and try again another day with the hope that E will one day enjoy them as much as all of us did ;-) So, here it is:-


A pound of fresh wild-caught salmon, skinned and chopped small
3 large organic eggs
2 tbsp. Organic Virgin Coconut Oil, ghee or butter
½ onion, chopped
2 cloves of garlic, minced
1 tbsp Soy Sauce
1 tbsp Oyster Sauce
½ cup of old fashioned oat meal (or breadcrumbs)
2 tablespoons chopped parsley


Break up the salmon with a fork and combine all ingredients in a large bowl. Mix well together and form into patties.
Heat 1 Tbsp. coconut oil in a large skillet over medium heat.
Cook the patties 4-5 minutes on each side.
